Ok, so living in NW Iowa has it's downside. High today was about -6 degrees. But on the upside,,, we have great beef, and grilling on a night like tonight, the beer and the Fireball stays cold as H*ll.

So you pretty much fully cook it in the Sous Vide and then just hit the grill for the finish and grill marks? Looks like a perfect medium rare.

Yep, I finished it (seared) in a cast iron grill pan on the stove top. 2 mins on each side.

I think I was most impressed by the uniformity of the steak. Also, super moist. I will always get the doneness I want now. No guessing, set it and forget it and it can never over cook.

A new era of cooking for me is on the horizon.........

BTW, I'll still use my Traeger for the low and slow.

Did you get the Anova or another brand? (Edit: I saw you got a Joule - nevemind) I just got the Anova with Bluetooth and Wi-Fi las week. Have only used it once so far but it works great. Looking forward to trying a roast. Probably try about a 42 hr cook time from what I have been reading and somewhere between 135-140 degrees.

Yep, Joule with BT and WF.

Wow, a roast sounds good. I did chicken breasts last night. I have chops and salmon waiting to be next. Then maybe a T-bone.

Right now I'm cooking in a big clear glass vase cuz I want to watch it. Works great so far. I will likely get a container made for Sous Vide cooking sometime soon.
